I have a real aversion to eggs, and never use them in casseroles. I generally just leave them out, but if the recipe looks a little dry, I will just add a little water or chicken stock. For instance, in lasagna, most recipes say to mix egg with the ricotta cheese. I whisk some water into the ricotta and then put it in the lasagna. For vegetable casseroles (sweet potato, etc) and meatloaves, crabcakes, etc, I just leave the egg out. They come out fine.
